Healthy Chicken Nuggets

You don't have to stop feeding your children their favourite foods - just make it from scratch with wholesome, nutrient dense ingredients.

Make a big batch and flash freeze them for another day...

Flash Freeze: To flash freeze, place chicken nuggets on a cookie sheet place in the freezer for 2 hours or so, then place in a freezer bag or container. To re-heat, pre-heat oven to 400F and heat up nuggets for about 15-20 minutes until sizzling and hot.


1Preheat oven to 375° F.

2Cut chicken into desired sizes, wash and pat dry.

3Place flour, (flaxseed, if using) and salt in one shallow bowl, eggs in another bowl and breadcrumbs mixed with herbs in a third bowl.

4Dip each piece of chicken, coating completely in flour, then eggs and finally breadcrumbs. Put oil on large baking sheet, place in preheated oven for 5 minutes.

5Put chicken on baking sheet cook 7-8 minutes turn and continue baking for another 7 – 8 minutes. (Depending on size of nuggets).


2 large Chicken Breasts, boneless, free range, organic

1 cup (*less 2 tablespoons if using flaxseed) Organic Spelt or Organic Whole Wheat

2 tablespoons flaxseeds (whole or ground) - optional

1⁄2 teaspoon sea salt

2 eggs, beaten with 2 tablespoons water

1 cup Spelt or Gluten Free Breadcrumbs

1 tablespoon mixed dried herbs of your choice, (basil, oregano, rosemary, thyme, sage...)

4 tablespoons extra virgin organic coconut oil
