Healthier Pad Thai

Avoid Pad Thai take-out and enjoy this version which is much healthier - with better fats and well-sourced protein.  Load it up with vegetables or serve with a big salad to make this family favourite even more nutritious!

 

 

Soft Serve

Blend all ingredients in food processor, scraping down the sides until it all reaches a smooth consistency.

Serve immediately with chopped nuts or berries if desired.

Makes 4 servings.

Cheesey Artichoke Dip

Who would have thought that this ol' standby dip recipe could be healthy?!?!

The secret to making this an energy boosting / 'feel good' dish is in the quality of the ingredients, here's a few examples: - Grass-fed, organic and full fat dairy contains exponentially more CLA (conjugated linoleic acid) than non-grass fed, which helps with the breakdown of adipose lipids (belly fat). - Artichokes help with bile production which emulsifies (breaks down) fat, making it easier to digest. - Then there's the antioxidant benefits of garlic and spinach and VOILA nutritious and soooo delicious!

NOTE: This wonderfully nutritious dip is very high in calories, so if weight gain is a concern... - try and stick to a 1 ounce (2 tablespoon) serving...

Bring these along to a BBQ and wow your friends and family with this healthy and delicious take on an ol' favourite!

Cilantro or Basil Pesto

Check out this yummy detoxing/energy boosting recipe.  If using cilantro it helps to reduce the buildup of metals like mercury in the body.  Garlic contains sulfur which helps your liver detoxify itself of heavy metals like lead and arsenic. Nutritional yeast is one of the best food sources of energy boosting B Vitamins.

If using basil, you will benefit from plant compounds that have antioxidant, anti-inflammatory and other health properties

Good quality parmesan cheese, "Parmigiano-Reggiano" is lactose free, easily digested, rich in calcium and even contains probiotics - to nurture your gut microbiota!

Serving Suggestions:
1. Toss with some good quality organic pasta
2. Drop a dollop into some creamed soup
3. Drizzle over nachos
4. Goes great with my "Living Aged Peppercorn Cheez" recipe. - Wowza! Now that's healing food!

Coconut Thai Noodle Salad

This noodle salad is great to bring along to a BBQ. Serve with some grilled meat or add some baked tofu - YUM!
