Caesar Salad Dressing

Caesar salad can be healthy!

1Start by placing parmesan cheese (if not already grated) and garlic into a blender and blend into small bits
2Add the rest of the ingredients EXCEPT the oil to the blender and blend for one minute on high
3If possible, remove the lid off the blender, turn blender on low and slowly drizzle oil
4At this point, you can use the salad dressing or store in a glass jar with a lid in the fridge for up to 3 days.
6Preheat oven to 375 degrees
7Toss bread in olive oil to coat
8Bake for 10 - 15 minutes, tossing occasionally
3 tablespoons finely grated Parmesan
1/2 teaspoon good quality salt
2 tablespoons fresh lemon juice
1 tablespoon sauerkraut with brine (optional - but amazingly healthy)
½ cup organic organic canola oil
Freshly ground black pepper to taste
2 cups crusty bread cut into 1/2 inch pieces (preferably organic sourdough bread)
1 - 2 tablespoons organic olive oil
Clean and pat dry a head of romaine lettuce, tear into pieces. Place in a large bowl and pour salad dressing, toss to coat.
Salad in picture is topped with cooked bacon and more grated parmesan.
