Chicken Soup

Serves 4

With well-sourced chicken, veggies and herbs this simple soup recipe will give your immune system a boost.

Add some cooked pasta if you like - the kids will love that.

Do not freeze soup with pasta in it.


1While preparing veggies - boil 8 cups of water in a large saucepan. Add chicken and spices bring back to a boil and let simmer for 5-7 minutes.

2Add veggies, continue simmering for 2 – 3 minutes.

3Add coconut milk and let sit for 5 minutes and adjust seasoning with, salt and pepper.

4At this point, soup can be stored in the refrigerator or freezer.

5You MAY want to cook veggies a little more, depending on if you like them crunchy or not.

6Garnish with chopped cilantro


4 boneless chicken thighs, cut into bit sized pieces (thighs are more flavourful)

8 cups water

2 teaspoons dried spices (mixture of oregano, basil, thyme, parsley)

2 – 3 ribs celery, chopped in small 1/4 “size pieces

2 – 3 carrots, chopped in ¼” size pieces

½ medium onion, chopped fine

1 clove garlic, minced

2 cups broccoli, coarsely chopped into bite sized pieces

1 can full fat coconut milk (BPA free can)

Fresh ground pepper and salt

Cilantro for garnish
