Gluten Free Banana Bread or Muffins

Directions
1*Soak chia seeds in 6 tbsp of water. Let soak until consistency of raw egg whites.
Preheat oven to 350F
12. In one bowl combine applesauce, honey and soaked chia seeds in a bowl.
23. Stir in mashed bananas, 2-3 drops nutmeg oil and vanilla.
34. In second bowl combine flours, salt, flax and cinnamon, whisk together.
45. Fold dry ingredients into wet. Be careful not to over mix.
56. Mix baking soda with hot water in a small bowl then stir into banana bread mix.
67. Add in chocolate chips if desired.
BREAD COOKING INSTRUCTIONS:
18. Grease one 9”X5” loaf pan with coconut oil.
29. Pour mixture into loaf pan, sprinkle almonds on top and bake for 55-70 minutes. Let cool in the pan before removing. Let cool completely before slicing.
310. For smaller loaves use 4 small loaf pans. Fill 3 of the pans ¾ full with bread mix and putting a cm of water into the 4th loaf pan. Bake for 30-45 minutes or when brown on top. Let cool completely before slicing.
MUFFIN COOKING INSTRUCTIONS:
111. Grease muffin tins with coconut oil or use muffin liners
212. Fill muffin tins ¾ full
313. Sprinkle slivered almonds on top
414. Bake at 350 Degrees F for 20 minutes.
