Directions

1Blend almonds into flour in food processor or Vitamix.

2 Add dates and continue blending

3 Press mixture evenly on the bottom and up the sides in a spring-form pan lined with plastic wrap

4 Place in freezer for 15 – 20 minutes

5 Place all Chocolate Buttercream ingredients into blender or food processor and blend until smooth.

6 Pour into pan and let sit in refrigerator for 4 – 5 hours or overnight.

7Garnish with sliced strawberries and mint leaves.

Ingredients

Crust:

2 cup almonds

2 cup dates

2 tablespoons raw cacao

Chocolate buttercream:

1 ½ cup dates

1 ¼ cup water

Juice from 1/2 lemon

½ cup cacao powder

4 tablespoon cashew butter

4 tablespoons coconut oil (or 3 tablespoons coconut oil and 1 tablespoon cacao butter)

4 tablespoons maple syrup

1 teaspoon vanilla extract

Pinch of salt

Topping:

Sliced strawberries (optional)

Mint leaves (optional)
