Directions
1Add onion and 1 cup of broth to a large pan over medium low heat, cook for about 5 minutes until onion is very tender. Add a little more broth if needed, to avoid burning
2Add garlic and continue cooking until broth has evaporated about 3 – 5 minutes
3Add cooked onion and garlic to a blender with about ¾ broth and remaining ingredients. Blend until smooth and creamy. If necessary add a little more broth.
4Add good quality sea salt and pepper, if desired.
Ingredients
1 medium white onion, chopped (approximately 1 ½ cups)
1 – 2 cups of low sodium vegetable broth. If you don’t have veggie broth on hand (or 1 cup of water with 1/4-1/2 teaspoon Herbamare) Not sure what Herbamare is – look here http://www.avogel.ca/en/health-food/herbamare.php
¼ - ½ teaspoon ground black pepper
½ heaping cup raw whole cashews (soak overnight in water or soak for 1 hour in very hot water)
