1Line plate or baking sheet with parchment paper to prevent from sticking
2Pit the dates and spread them apart using fingers to press them onto prepared pan
3Mix peanut butter with vanilla extract
4Spoon one teaspoon of peanut butter on each date
5Melt chocolate and coconut oil in double boiler to prevent burning*
6Spoon melted chocolate over each date, taking care to cover completely
7Place in freezer for one hour or refrigerator for 2 - 3 hours
8Store in airtight container in refrigerator for a few days (they probably won't last that long)
9Use parchment paper to prevent them sticking to each other
10*If you don't have a double boiler, just put chocolate in small saucepan. Place small saucepan inside larger saucepan with boiling water.
9 Medjool dates
1/2 tablespoon extra virgin coconut oil,
9 teaspoon peanut butter or almond butter (preferably raw and organic)
9 walnuts
1/2 teaspoon real vanilla extract
75 grams or 2.6 ounces - I used a brand called Alter Eco 85% cacao
