Makes 2 meal-sized bowls of soup.
Super quick, delicious and nutritious!
This versatile recipe can be made with any leftover veggies you have in the fridge.
1Heat water to boiling in medium sauce pan
2Add all ingredients EXCEPT noodles, kimchi and garnish
3Bring to boil, simmer for 2 minutes then add noodles and cook until softened (2-3 minutes)
4Plate in large individual serving bowls top with garnish and kimchi
2 cups filtered water
½ small chopped onion
1 large or 2 small garlic, chopped
2 teaspoons grated ginger
2 cups assorted chopped veggies (Ideas: carrots, cabbage, broccoli, cauliflower, kale, mushrooms…)
2 tablespoons tamari
1 tablespoon rice vinegar
1 teaspoon sesame oil
2- 4 tablespoons chopped cilantro and/or chopped green onion (garnish)
Add tofu for extra protein
Ramen Noodles (I like the organic Lotus Foods brand)
Kimchi to taste (at least one tablespoon per bowl)
