Simple Salad

I find that one of the ways individuals try to eat healthy is by adding salads in daily – Greens are GREAT, but pre-made salad dressings are not.  Check out this super simple and delicious salad dressing...

Directions

1Add dressing ingredients to a jar (if you're making enough for another day) or mix all ingredients into a large bowl and whisk until well-combined. Add salad makings and toss to coat

2Sprinkle of salt and fresh ground pepper.

3NOTE: Oil to vinegar ratio should be 3:1 - (i.e. 6 tablespoons of olive oil to 2 tablespoons of vinegar)

Ingredients

Fresh preferably local mixed greens, arugula, spinach, lettuce

Options: (tomatoes, cucumbers, chopped celery, grated carrot, thinly sliced red onion, chopped broccoli and/or cauliflower...)

6 Tablespoons good quality Extra Virgin Olive Oil

2 tablespoons good quality balsamic vinegar or raw/unpasteurized apple cider vinegar

1 tablespoon freshly chopped herbs (tarragon, oregano, basil...) - OR, 1 teaspoon dried

1 teaspoon maple syrup or raw honey (optional)

Sea salt

Freshly ground pepper
