Lemon Herbed Olives

Directions

1In a small saucepan (I like to use my cast iron pan and serve from there as well), heat oil, then add garlic and cook until it starts to brown.

2Stir in olives, herbs and lemon, stir, remove from heat. Let stand for 10 minutes before serving.

Ingredients

1⁄4 cup extra-virgin olive oil

1⁄2 lemon cut into wedges

3 sprigs of thyme

2 small garlic cloves, sliced

1 1⁄2 cups mixed olives (preferably good quality brine-cured)
