Gut Healthy Apples & Oatmeal

This recipe can be enjoyed any time of day, for breakfast, as a snack or even a dessert. The apples, oatmeal help to feed the gut microbiota while the kefir builds it. It also has loads of good fat and protein to keep you satiated and your blood sugar stable. The sweeteners are filled with health promoting properties - so this is a great choice if you're like me and have a 'sweet tooth'...

Directions

1Boil water in small saucepan and add the date. Reduce heat to medium and cook for 1 minute

2Add Apple and stir for 2 minutes

3Add oatmeal, cinnamon, salt and coconut oil continue cooking over low heat until water is absorbed

4Remove from heat and fold in hemp hearts and honey, stir until well-combined

5Drizzle with kefir or add a dollop of yogourt

6Garnish with berries and nuts to make it pretty - (optional)

Ingredients

1/3 Cup filtered water (or a little more if it seems to dry)

1 Pitted date, chopped

1 Organic Apple, chopped into bite sized pieces

1/4 Cup, organic, large flake oatmeal

1/4 Teaspoon good quality Ceylon cinnamon

Dash of good quality salt

1 Tablespoon extra-virgin coconut oil

1 Teaspoon hemp hearts

1 Teaspoon unpasteurized honey

2 Tablespoons unsweetened, organic kefir (or yogourt)

1 Tablespoon chopped nuts (optional)

Fresh berries for garnish (optional)
