Yup! French Fries can be healthy if made with good oil, organic potatoes and good quality sea salt. Make extra and flash freeze them for another day...
Flash Freeze: When the fries are almost cooked completely. Freeze them by spreading them out on a baking sheet or tray, then packing them in airtight containers or freezer bags or wrapping with foil or plastic wrap for longer storage. Cook from frozen in a 400 F oven for 15 minutes or so, turning once half way through cooking.
Directions
1Pre-heat oven to 450° F
2Wash and scrub potatoes – do not peel
3Cut into thin French fries, and dry with a clean dish towel or paper towel
4Place coconut oil on baking pan with rim, pop into the oven for 2 minutes to heat pan and melt oil
5Place cut potatoes onto baking pan, try to leave a little space between each fry if possible.
6Bake for 10 minutes (You can remove and flash freeze* at this time)
7Turn and continue cooking for another 10 minutes until golden brown.
8If the fish isn’t ready yet – just remove fries for the last few minutes of cooking and return to the oven, so they can be served hot alongside the fish.
