Super Energy Loaf (aka Meatloaf)

Directions

1Preheat oven to 350 Degrees F

2Coat loaf pan with coconut oil

3Place chicken livers, onion and garlic into food processor

4Do NOT overprocess - leave chunks of onion

5Cook liver and onion mixture in a small pan

6Add all ingredients, except (2 tablespoons of ketchup) into a large bowl and mix.

7Place mixture into loaf plan, pressing down until smooth

8Spread 2 tablespoons of ketchup over meat loaf

9Bake for 55 minutes

Ingredients

2 tablespoon coconut oil

1 pound free-range ground beef (preferably grass-fed)

1/4 cup chicken liver

1 cup dried bread crumbs or oatmeal

1 1/2 yellow onion quartered

4 cloves garlic

2 large eggs beaten

1/2 cup ketchup (see homemade ketchup recipe)

1 tablespoon Worcestershire sauce (there are good quality natural brands)

1/2 cup fresh parsley, chopped fine

3/4 teaspoon sea salt
